Why this is annoying
The nouns are only half the recipe.
大さじ is a tablespoon. 小さじ is a teaspoon. 弱火 means low heat, and 適量 means the author did not give you an exact amount.
Shio keeps those details with the line where they belong. The original Japanese stays available when an ingredient name is more useful at the market than its English translation.

One honest caveat
Some Japanese ingredient names belong in the English copy.
Dashi, mirin, shiso, and yuzu are easier to shop for under their Japanese names. Shio can add an explanation without replacing the word you need on the package.

Leave the Japanese term beside the English description when it helps you find the right ingredient.
Do not invent a spoonful
