Dinner in half an hour

12 30-minute Asian dinners for busy nights

I was VERY strict about the 30 minutes! The clock starts before you chop the scallions or mix the sauce, because a ‘30-minute recipe’ that assumes everything is prepped is not actually a 30-minute recipe.

The useful part

What should I make?

Fastest

Rotisserie Kou Shui Chicken Bowl

Buy the chicken and use leftover rice. It's done in 15 minutes.

Best noodles

Beef Chow Fun

Wide rice noodles and tender beef, with only 10 minutes at the stove.

Best pantry dinner

Chinese Tomato and Egg Stir-Fry

Eggs, tomatoes, rice. I almost always have everything already.

Best soup

Beef Sundubu Jjigae with Zucchini

Spicy, bubbling, and full of soft tofu. Add the egg at the end.

One thing: start your rice first. And for the beef chow fun or beef and onion stir-fry, have everything cut before you turn on the stove. Both cook REALLY fast once the pan is hot.

  1. Tonkotsu ramen with chashu, a marinated egg, scallions, and nori

01 · about 30 minutes, plus optional egg marinating

    Shortcut Tonkotsu Ramen

Please just buy the frozen ramen kit. I add prepared chashu, spinach, bean sprouts, nori, and a jammy egg, and suddenly it feels like a proper bowl of ramen. The egg doesn't need to be marinated!

  2. Steamed char siu bao buns filled with glazed Chinese BBQ pork and served with hoisin dipping sauce.

    02 · 15 minutes

    15-Minute Char Siu Bao Buns

These are barely a recipe, which is exactly why I like them: frozen folded buns, char siu from the barbecue counter, hoisin, and cucumber. You can be eating in 15 minutes.

  3. Hong Kong-style macaroni soup topped with luncheon meat, a fried egg, and scallions

    03 · about 30 minutes

    HK-Style Macaroni Soup

I know macaroni in chicken broth sounds a little strange if you didn't grow up eating it, but with luncheon meat and a fried egg, it's SO comforting. Please make it for dinner too!

  4. Chinese beef and onion stir-fry with scallions in a glossy brown sauce

    04 · 30 minutes

Chinese Beef and Onion Stir-Fry with Scallions

The beef gets really tender, the onions stay a little crisp, and there's plenty of glossy oyster-soy sauce for rice. Mix that sauce first! Once the beef hits the pan, you won't have time.

  5. Mapo tofu with pork in a glossy red chile-bean sauce

    05 · about 30 minutes

    Mapo Tofu

This is the mapo tofu I make at home with soft tofu, ground pork, chile bean paste, and lots of Sichuan peppercorn. The rice takes longer than the tofu, so start it first.

  6. Beef sundubu jjigae with zucchini and soft tofu in a black stone bowl

    06 · 30 minutes

    Beef Sundubu Jjigae with Zucchini

A spicy Korean stew with thin beef, zucchini, mushrooms, and soft tofu. I crack the egg in at the very end because I want the yolk runny when it gets to the table.

  7. Niku udon with sliced beef, thick noodles, greens, and fish cake in clear broth

    07 · about 30 minutes

    Niku Udon

If you have frozen udon, thinly sliced beef, and dashi, you're most of the way there. The broth is light, the beef and onions are a little sweet, and the noodles take just a few minutes.

  8. Beef chow fun with wide rice noodles, bean sprouts, scallions, and sesame seeds

    08 · about 30 minutes

    Beef Chow Fun

My pick when I want noodles but not soup. Get the pan VERY hot, pat the noodles dry, and don't fuss with them too much. You want the edges to fry instead of steaming into one big noodle brick.

  9. Mushroom sundubu jjigae with soft tofu, sliced beef, and mushrooms in a black stone bowl

    09 · 30 minutes

    Mushroom Soft Tofu Soup

This one has silken tofu, thinly sliced beef, zucchini, an egg, and three kinds of mushrooms. The broth only simmers for 20 minutes, but all those mushrooms make it taste like it's been going much longer.

  10. Sliced rotisserie chicken over rice with cucumbers and chili-crisp sauce

    10 · about 15 minutes

    Rotisserie Kou Shui Chicken Bowl

This is what I make when there's a rotisserie chicken in the fridge and I don't want another sandwich. Reheat some rice, slice a cucumber, and pour the chile-crisp and black-vinegar sauce all over it.

  11. Wide liang pi noodles with sliced beef, broccoli, and spicy red chile sauce

    11 · about 20 minutes

    Liang Pi

Cold noodles are absolutely dinner, especially when they're chewy liang pi covered in sesame paste, black vinegar, garlic, and chile oil. Buy the noodles prepared and the whole thing takes 20 minutes.

  12. Chinese tomato and egg stir-fry with soft scrambled eggs and juicy tomato wedges

    12 · 20 minutes

    Chinese Tomato and Egg Stir-Fry

I make this when the fridge is basically empty: soft scrambled eggs, juicy tomatoes, and hot rice. It's cheap, SO comforting, and you can get everything at any grocery store.

Frequently asked questions

Before you start cooking.

What Asian dinners can I make in 30 minutes?

Make beef chow fun, niku udon, liang pi, or shortcut ramen if you want noodles. Tomato and egg is easiest when the fridge is bare. For something spicy, I'd pick mapo tofu or beef sundubu.

Do these 30-minute recipe times include prep?

Yes, the chopping and sauce mixing count. The ramen egg is the only exception: marinate one ahead or just make a plain jammy egg.

Which recipes are easiest for beginners?

I'd start with tomato and egg, the rotisserie kou shui chicken bowl, shortcut ramen, or the 15-minute char siu bao. Beef chow fun isn't hard, but you do need everything ready before the pan gets hot.

What should I keep on hand for quick Asian dinners?

Soy sauce, toasted sesame oil, Chinese black vinegar, oyster sauce, and chile crisp are the bottles I reach for most. I also keep frozen udon and a ramen kit around for nights when 30 minutes already sounds like a lot.
