Chicken Salad Croissant Tea Sandwiches

Mini croissant filled with chunky chicken salad

I’ve always loved tea sandwiches. But aside from traditional high tea sandwiches like egg salad and cucumber with cream cheese, sometimes I forget to give chicken salad some love! Quarter the grapes before adding them. Whole grapes escape the croissant on the first bite.

    Make the dressing

    Stir together the mayonnaise, lemon juice, Dijon, salt, and several grinds of black pepper.

    Mix the filling

    Add the chicken, celery, grapes, and parsley. Fold until evenly coated without breaking the chicken into tiny pieces.

    Chill

    Cover and refrigerate for at least 20 minutes. Drain any liquid that gathers at the bottom before filling the croissants.

    Prepare the croissants

    Split each croissant through the middle, leaving the back hinge attached.

    Assemble

    Add a lettuce leaf, if using, followed by a generous spoonful of chicken salad. Press the croissant closed lightly and serve cool, not refrigerator-cold.

Shortcut and substitutions

Prepared chicken salad turns this into assembly. Stir in quartered grapes and lemon juice. Taste before adding salt because deli chicken salad rarely needs help in that department.

Grapes: Use finely diced apple, dried cranberries, or golden raisins.

Extra crunch: Add 3 tablespoons toasted almonds, pecans, or sunflower seeds.

Mayonnaise: Replace half with full-fat Greek yogurt.

Croissants: Use brioche slider buns or soft white sandwich bread with the crusts trimmed.

Rotisserie chicken: Leftover roast turkey works without other changes.

Make the filling ahead

Make the chicken salad one day ahead. Drain any loose dressing and line the croissants with lettuce.

Filled croissants can wait in the refrigerator for about two hours, loosely covered with a barely damp paper towel and then plastic wrap.

Food safety

Keep the sandwiches refrigerated until shortly before serving. Do not leave chicken salad at room temperature for more than two hours, or more than one hour in very warm conditions.
